Junmai 'Suigei Tokubetsu' Suigei Shuzo, Kouchi 15%
Versatility which brings a reserved ricey nose and milder umami with pleasant acidity when slightly chilled, and richer flavors with longer aftertaste when slightly warmed.

Kenbishi Kuromatsu Honjozo Sake
This is the taste of old school sake: deep, rich, bursting with umami, sweetness and acidity. Pairs beautifully with oysters, sea urchin, tempura and even dry-aged steak. Made from locally Hyogo-grown Yamada Nishiki and Aiyama milled to 60% and a touch of distilled alcohol to add weight and enhance the dark aromas.

Tatenokawa 3 Peaks Junmai Daiginjo
is a limited quantity sake made with Dewasansan rice grown in Yamagata prefecture and polished to 33%. Rich ripe fruit aromas show sweet citrus fruit on the palate with an elegant and refreshing mouthfeel and just the right amount of umami. Serve chilled paired with sushi and sashimi.

Junmai 'Blue Door' Brooklyn Kura 17%
Made from a blend of Calrose and Yamada Nishiki rice milled to more than 70% and fermented slightly warm. Full bodied, dry, and umami with subtle notes of banana and ripe melon.

Junmai Daiginjyo 'Izumibashi' Tokusen Kimoto Kanagawa 16%
A Junmai Daiginjo sake made using the traditional Kimoto-zukuri method and with Izumibashi-grown Yamada Nishiki rice polished to 40%. It has a mild aroma of ripe apples, orange blossoms, and jackfruit with a gentle sweetness and a smooth umami finish on the palate. The juicy acidity is veiled by its full mouthfeel, bouncy texture, and hints of straw. 720 ML

Honjozo 'bibibi' Shodoshima Shuzo, Kagawa 16%
Light coriander, bay leaf, and pounded mochi on the nose, with a hint of ground sesame, oyster shell, and a floral undercurrent. On the palate, while light in texture, it offers an intense umamai and salinity with a mixture of dried herbs. A savory, medium long finish. It is a delicious brew that can be enjoyed at almost any temperature. Bibibi is a Japanese phrase for "sunlight reflecting off the sea".

Honkaku SHOCHU
The spirit of Japan, shochu is single distilled and wonderfully dynamic, usually made from sweet potato, barley or rice. Best enjoyed over ice or with a splash of cold or hot water, each combination will bring out different aromas and flavors.-
